Orange Cupcakes with Icing

Sounds delicious isit? I decided to make cupcakes after some reports on the papers that its getting popular nowadays. Moreover I need a break from baking muffins.

Orange Cupcakes

Ingredients


1 and 3/4 cup cake flour

1/2 cup orange juice (preferrably with REAL juice)

1 teaspoon of vanilla essence

2 large eggs separated (i used 3 medium eggs)

113 grams of unsalted butter (I used maragine. Its healthier)

1 cup castor sugar

Method

Preheat your oven to 180degrees celicus

Combine butter, sugar, egg yolks, and vanilla in a mixing bowl. Cream these ingredients together thoroughly.

Mix flour, salt, and baking powder together in a separate mixing bowl. Add dry ingredients to creamed ingredients 1/3 at a time alternating with adding portions of the orange juice to the creamed mixture.

Fold in beaten egg whites. Spoon batter into cupcake liners until 1/2 full.

Bake in a 350 degree preheated oven for 15 minutes or until a toothpick inserted in center comes out clean.

How about the icing? Its very easy. just mix a cup of icing sugar with 2 tablespoon of maragine and 2 teaspoon of orange juice together with a tablespoon of orange zest and ABRACADABRA!!! you got your own icing.

Light cheesecake


The "baking bug" bite me tonight. I got "Japanese Light Cheesecake" virus. This cake dont look as good as those sold outside however I was pleased with it because
  1. it really turned out LIGHT
  2. its not too sweet
  3. my dad likes it!

Ingredient:
Cookie Base

3 nos of Digestive Biscuits
1 tbsp of maragine
A dust of cinnamon

Filling
1 packet of cream cheese (softened)
1/4 cup of milk
2 edd yolks , 2 egg white
1/4 cup of castor sugar
1/3 tsp of tartar sauce
3 tbsp of flour
1 1/2 tbsp of cornstarch

Method:
  • Preheat the over to 180 degree celcius
  • Warm cream cheese & milk in a small sauce pan over medium low heat. Cook & stir till cream cheese is melted. Set aside.
  • Beat (with electric mixer) egg yolk & half of the sugar unit light & fluffy.
  • Fold in cream cheese mixture into yolks
  • Sift the floor and cornstarch and stir into the mixture till its well blended
  • In a separate bowl, whip the egg whites with tartar cream till they can hold soft peak. Gradually sprinkle in the remaining sugar and conitnue whipping to stiff peaks
  • Fold the egg whites into the cream cheese mixture
  • Pour into the prepared cake pan
  • Bake for 20mins @ 180 degree celcius then reduce to 160 degree celcius for 15 mins

Cookies

the Cookies i made dun smell like those from famous amos but i very happy with my 1st trial results. Not too sweet. crispy.

thus I would like to share the recipe. tried & tested.

my guinea pigs verdict: great! (who r my guinea pigs: my mama, papa, bros)


Ingredients

3/4 cup unsalted butter, soften
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
2 tsp vanilla extract
2 cup of all purpose flour
1 tsp baking powder
1/2 tsp salt
200g chocolate chips (unsweeten)
and a bit of milk

Method
:
Preheat oven to 180deg
Sift flour thogether with baking powder.
Cream together butter n sugar until fluffy. Add egg, vanilla n blend in.
Mix the rest of the dry ingredients then stir in the choclate
drop the cookie dough onto greased baking sheetings and bake for 10-15mins
